Mix all the marinade ingredients together.
Season the meat on the inside and roll lengthways like a Swiss roll, starting from the thick side.
Thread metal or wooden kebab skewers through the meat, leaving a 25 mm space between the skewers.
Cut between the skewers.
Thread orange and bay leaves on the ends of each skewer and marinate for one hour.
Remove the meat from marinade and pat dry with kitchen paper.
Grill the kebabs over moderate coals or under a preheated oven grill, brushing with marinade occasionally.
Grill for 5 - 7 minutes, turning occasionally, or until done.
Season to taste and serve warm with a salad of choice.
