Rate this recipe:
    • 125 g bacon, chopped
    • 2 large onions, chopped
    • 1 clove garlic, crushed
    • 6 large potatoes, peeled and sliced
    • 50 ml (45 g) Clover Mooi River Butter and 15 ml extra for frying
    • 10 ml fresh thyme, chopped
    • salt and freshly ground black pepper to taste
    • 250 ml (100 g) Clover Mature Cheddar, grated

    Preheat oven to 180°C.

    Heat the extra butter in a heavy-based frying pan.

    Add the bacon and fry until crispy.

    Remove from pan and set aside.

    Add the onion and garlic to the pan and sauté until onion is translucent.

    Remove from pan and set aside.

    Arrange the potato slices with the bacon and onion in layers in an ovenproof casserole dish, ending with a layer of potatoes.

    Sprinkle the herbs over and season to taste.

    Place the 50 ml butter in dots on the potatoes and sprinkle the cheese over.

    Cover with lid and bake for 1 hour or until potatoes are cooked.

    Remove lid and bake for another 5 - 7 minutes until cheese is golden on top.

    Serve immediately.
