Ingredients
    • 2 large red peppers, seeded and quartered
    • 125 ml sun-dried tomatoes in olive oil
    • vinaigrette, drained
    • 10 ml fresh ginger, grated
    • 100 ml sweet piquanté pepper relish
Method

    Grill the red pepper, skin side up, until blackened.

    Allow to cool.

    Peel away the skin and chop roughly.

    Process with remainder of ingredients in a food processor until mixed through.

    Serve on baked potatoes, pasta or crostini, or add a dash of olive oil, mix well and drizzle over your favourite salad.
