Ingredients
    • 3 egg yolks
    • 200 ml (160 g) sugar
    • 75 ml (70 g) Clover Mooi River Butter
    • 5 ml grated lemon rind
    • 75 ml fresh lemon juice
    • pinch of salt
Method

    Mix all the ingredients together and simmer over low heat in a double cooker or in a bowl over simmering water.

    Allow to simmer for 10 minutes, stirring continuously, or until mixture thickens.
