Ingredients
    • 125 g Clover Mooi River Butter, melted
    • 100 ml sugar
    • 3 eggs 500 ml cake flour
    • 15 ml baking powder
    • 3 ml salt
    • 125 ml maize meal
    • 410 g creamed sweetcorn
    • 125 ml Clover Fresh Full Cream Milk
Method

    Preheat oven to 180°C.

    Cream butter and sugar together.

    Add eggs one at a time, beating constantly until mixture is light and fluffy.

    Sift flour, baking powder and salt together.

    Add the dry mixture to creamed butter mixture.

    Add maize meal, sweetcorn and milk.

    Mix well and spoon into a greased 23 cm loaf tin.

    Bake for 50 - 55 minutes or until a skewer comes out clean when inserted into the centre of loaf.

    Turn out onto a wire rack and allow to cool before slicing.
