Sift together dry ingredients.
Beat together the eggs, oil, vanilla essence and milk.
Make a hollow in the centre of the dry ingredients and pour liquid mixture into the centre.
Stir gently with a wooden spoon to combine the ingredients.
Do not over mix.
To make high-capped muffins, fill the tin generously, almost to the top.
Bake in a preheated oven at 180°C for 20 - 25 minutes.
