Ingredients
    • 450 ml cake flour
    • 15 ml baking powder
    • 2 ml salt
    • 200 ml Clover Cheddar, grated
    • 50 g Clover Mooi River Butter, room temperature
    • 250 g fat free cottage cheese
    • 1 egg
Method

    Preheat oven to 220°C.

    Sift flour, baking powder and salt together.

    Add the cheese and mix well.

    Add butter to mixture and rub in lightly with fingers, then add cottage cheese and egg and mix through.

    Divide the dough into three. Roll each third out into a round.

    Using a dinner plate, cut into perfect circles.

    Divide each into eight triangles/wedges.

    Roll each triangle from the round side towards the point and press into a half-moon shape.

    Place on a greased baking tray, brush lightly with beaten egg and bake for 8 minutes.

    Serve immediately.
