Ingredients
    • 2 eggs
    • ½ cup (110 g) Clover Mooi River Butter, melted
    • 2 cups (50 0ml) Clover Full Cream Milk
    • 2½ cups (350 g) cake flour
    • 1 cup (160 g) polenta
    • ½ cup (100 g) sugar
    • 1 tsp (5 ml) salt
    • 4 tsp (20 ml) baking powder
    • ½ cup (75 g) corn kernels
    • Optional:
    • ¾ tsp (3 ml) dried red chilli, crushed
Method

    Preheat the oven to 200°C and grease a large loaf pan. Whisk the eggs, butter and milk together and add the cake flour, polenta, sugar, baking powder and salt and stir until well combined.

    Finally, stir in the corn kernls and chilli (if using) and pour into the prepared loaf pan.

    Bake for 20 - 25 minutes or until a skewer inserted comes out clean and the bread is springy to the touch.

    Cool for 5 minutes before slicing.
