Sift flour and baking powder together.
Rub the butter into mixture with fingertips until mixture resembles bread crumbs.
Add grated cheese, mix and shape into a ball.
Cover and allow to rest in fridge for 30 minutes.
Remove and roll out on a lightly floured surface.
Cut shapes with a cookie cutter and place on baking sheets.
Bake in a preheated oven at 180°C for 15 - 20 minutes until golden brown.
Allow to cool on baking tray and remove.
Serve with a savoury filling or fine apricot jam.
Do not bake too long for it may cause a bitter taste.
