METHOD FOR THE CAKE:
Preheat the oven to 1800C.
Grease about 10 mini loaf tins or mini brioche molds and dust with flour.
In a large mixing whisk together the zest, oil, sugar, eggs until smooth and pale in colour.
Add the semolina, milk and buttermilk and sift in the flour, mix until smooth with no lumps.
Divide the batter between the tins, fill them about two-thirds full.
Bake for 20-25minutes or until a skewer comes out clean.
METHOD FOR THE SYRUP:
While the cakes are in the oven prepare the syrup by all the ingredients except the lemon slices to a saucepan.
Heat gently until all the sugar has dissolved, add the lemon slices and bring to a simmer.
Simmer for about 20minutes until the lemons are soft.
When the cakes are done, loosen them slightly in their tins and pour a generous amount of syrup over each cake (about 3tbs per cake).
Leave in the tins until syrup has been absorbed then carefully turn out and place on a wire rack to cool. If you want the cakes to sit flat you can trim off the domes, garnish with the lemon slices and serve.

Preheat the oven to 160ºC.
Grease and line a 23cm spring fort tin with non-stick baking paper.
Whisk together the eggs and sugar until very pale, fluffy and thick.
Continue to beat the mixture whist gradually adding the Olive Oil to the mixture.
Gently fold in the flour, as well as the juice and zest of the lemon.
Pour into prepared baking tin and bake for 40 – 45 minutes until cake is golden.
Once cooled, sift the icing sugar over cake and serve.
Preheat the oven to 1800C.
Cut the pastry roll into two pieces and roll out into equal size squares.
Place them on top of each other and from the short side, roll into a log.
Cut the log into 12 even-sized rounds.
On a lightly floured surface, roll each round into a disc and press the pastry discs into the muffin tin.
In a saucepan, combine the Clover Classic custard and cornflour slurry.
Heat whilst stirring until well combined and slightly thick. Remove from heat.
Spoon the cooled custard mixture into the pastry discs and bake for 15-20minutes.
Allow to cool on a cooling rack or serve warm.

Preheat the oven to 1800C.
Combine the eggs, brown sugar, oil, milk and vanilla essence and mix well.
Mix together the flour and baking powder and add to the brown sugar mixture.
Fold in the chocolate chips and sprinkles.
Bake for 18-20minutes until a skewer comes out clean.
Once cooled, drizzle over melted white and milk chocolate.
Serve with milk.
Coat your banana chips in the melted white chocolate and set aside to firm up.
Cream the butter and sugar together until pale and fluffy, add the egg and mix through with the vanilla before adding the baking powder, baking soda and flour.
Mix gently to combine with the Super M to create a batter.
Roughly chop the banana chips and add to the batter along with the pecans which have also been roughly chopped.
Pour the batter into a greased oven dish and bake at 1800C for 30minutes or until a cake tester comes out clean after testing.
Allow to cool slightly before cutting into squares and serving.
