Preheat the oven to 180°C.
Grease a 21 cm ring mould and sprinkle with cocoa.
Add boiling water and bicarbonate of soda to finely chopped dates.
Cream butter and sugar until light and fluffy.
Add eggs and mix well.
Add dates and sifted cocoa and flour and mix.
Spoon into mould. Bake for 60 – 75 minutes, until tester comes out clean.
Remove from oven.
Meanwhile combine sugar, butter and cream and stir until sugar dissolves.
Add chocolate and stir until melted.
Add mint.
Turn out puddings, plate and garnish with sprigs of mint and thick cream.
Serve with sauce.
For meat:
Mix the olive oil, balsamic vinegar, red wine vinegar and garlic together in a glass bowl.
Add the meat and allow to marinate for at least 30 minutes or overnight in the refrigerator.
Thread the meat with the peppers onto the skewers.
Arrange skewers on the rack of an oven roasting pan.
Grill under a preheated oven grill until done to taste, turning meat regularly.
Meanwhile, cook the couscous according to instructions on pack.
Keep warm.
For dressing:
Mix all ingredients together and allow to rest for a few minutes.
Divide the couscous between 4 plates.
Place the kebabs on top and drizzle the dressing over the meat and couscous.
Season to taste and serve immediately.

Mix cocoa and boiling water, add milk and stir until smooth.
Beat butter and sugar until light and fluffy.
Add eggs one at a time and beat well after each addition.
Sift together flour, baking powder and salt.
Add vanilla and chillies to cocoa mixture and then add to butter mixture.
Mix well.
Add dry ingredients and beat until combined.
Spoon into prepared cake tins and bake for 40 – 45 minutes until tester comes out clean.
Cool on wire racks.
Frosting:
Melt chocolate and cream over medium heat.
Stir until thickened. Remove from heat, add glucose and stir.
Leave to cool slightly before frosting the cake.
Meanwhile spread caramel on layers and place one on top of the other.
Finish with frosting top and sides.
Decorate with chillies.
