INGREDIENTS FOR CHAKALAKA:
2 tablespoons Olive Pride Blend of Seed Oils and Extra Virgin Olive Oil
1 onion, diced
1 green pepper, diced
1 red pepper, diced
2 carrots, peeled and grated
2 chillies, finely chopped
1 tin baked beans
1 tablespoon curry powder
1 tablespoon Brown vinegar
¾ cup water
salt and pepper
INGREDIENTS FOR THE CLOVER AMASI WAFFLES:
2 cups flour
1 cup Clover Amasi Full Cream
1 cup milk
4 tablespoons Clover Springbok Unsalted Butter, melted
2 eggs, separated
3 teaspoons baking powder
2 teaspoons sugar
½ teaspoons salt
METHOD FOR THE CHAKALAKA:
Add oil to a medium-high heated sauce pot, the add onion, green pepper, red pepper and chillies, sauté until golden brown.
Add curry powder and stir, then add the carrots, vinegar, baked beans and water.
Allow to cook on a light simmer for 2-3 minutes. Serve the chakalaka with Clover Amasi waffles.
METHOD FOR THE CLOVER AMASI WAFFLES:
In a large mixing bowl, sift all the dry ingredients together.
Beat the eggs yolks together with the milk and Amasi, then add the wet ingredients to the dry ingredients, mix well to combine.
Add the melted butter and mix well. Fold in the stiffly beaten egg whites and bake in a hot waffle iron, until golden brown and puffed. Serve the waffles topped with chakalaka.
