250 g cauliflower
250 ml polenta
3 ml Salt
5 ml black pepper
500 g beef strips
200 g Clover black pepper feta
30 ml canola oil
205 g tomato puree (small tin)
200 g fresh basil
Pre-heat the oven to 220°C
Steam the cauliflower for 7 minutes. Drain, and puree in a blender.
Boil 4 cups of water, add salt and polenta, mix over a high heat for 2 minutes.
Divide into 4 equal parts.
Brush a baking sheet with cooking oil. Roll the cauliflower-polenta portions into a circular shape on the baking sheet.
Bake for 15 minutes, or until golden with crispy sides.
Meanwhile, stir-fry the beef strips for 2 minutes over high heat. Set aside.
Spread tomato puree over bases and top off with feta and beef. Place in the oven until feta has softened (about 2 minutes).
Top pizza off with avocado and fresh basil.
