250 ml Clover Classic Plain Yoghurt Based Dairy Snack
1 Tbsp Tomato paste
500ml White Wine – Chenin blanc
1 Clove Garlic – Crushed
1 Cup Chicken stock
1 Cup Jasmine rice
3/4 Cups Chutney
Salt – to taste
Chicken spice- to taste
Fresh Red Chillies – to taste
8 Black mushrooms
Bacon – diced
1 Tbsp Maizena
1 Onion – Finely Chopped
1 Handful of Clover Cheddar Cheese (Optional)
Place the chicken pieces in a pan and brown the meat with the salt and spices.
Once the chicken pieces are browned nicely, add the onion, bacon, garlic, mushrooms, rosemary, chillies and the tomato paste.
Grill the ingredients until the onion is translucent and the bacon is nice and crispy. Then slowly and the liquid ingredients: the wine, chutney and chicken stock. Let the liquid simmer on the stove top until its reduced.
Move the ingredients into an oven proof dish and cover with the sauce.
Bake for 30-40 minutes.
Mix together the yoghurt, cream and Maizena and add it to the mixture in the oven.
Remove the lid and leave it for another 10min in the oven.
