1 packet Tennis biscuits, finely crushed
1 tin Clover condensed milk
½ cup lemon juice
½ cup Clover Amasi
¼ cup Clover butter, melted
3 egg yolks
1 tablespoon corn flour
1 packet lemon jelly
Combine the melted butter and crushed biscuits, and press the biscuit mix into a pie dish. Place in fridge.
Add 1/3 cup of boiling water to the jelly, mix well and set aside.
Pour the condensed milk, egg yolks and corn flour into a saucepan, whisk until well combined.
Gradually add the lemon juice and Amasi, bring the saucepan to a medium heat, and stir the mixture continuously until the mixture has thickened.
Gradually stir in the jelly mixture until well combined.
Pour the filling into the pie dish and place back into the fridge to set overnight.
