500 g Clover butter, cubed
350 g sugar
Zest of 2 oranges
1 teaspoon vanilla extract
500 ml Amasi buttermilk
1,5 kg self-raising flour
1 teaspoon cinnamon
1 teaspoon fine salt
Preheat the oven to 180oC. Grease a loaf tin.
Melt the butter and sugar in a medium saucepan. Remove from the heat and add the Amasi and zest.
Sift all the dry ingredients in a medium bowl. Make a well in the middle of the flour and pour in the liquid. Mix until a dough starts to form.
Roll the dough into small ball. Pack tightly into the loaf tin.
Bake for an hour. Remove and turn the temperature down to 60oC.
Break the rusks up into chunks and place on a wire rack. Dry overnight (6 – 8 hours).
Store in an airtight container.
Serve with a warm glass of clover milk or a warm beverage.
