Place the basil pesto and red pepper pesto into two separate bowls.
Crumble about 3 tablespoons of feta into each bowl and mix well to form a paste.
Slice a few slices of the Clover mature cheddar and Clover gouda cheese.
Top some crackers, some with a slice of cheese, some with the cheese pesto. Add some olive tapenade to some too.
Start by placing the crackers in a circle. Then on the inner crackers place another round of crackers, making the circle smaller and smaller as you repeat, like a pyramid. This will give you your tree shape.
Once the tree is complete, fold the smoked salmon and Parma ham into small roses. Place the smoked salmon and Parma ham around the tree and serve.
