This bread can be baked in the oven or over the coals.
2 cups flour
1 tin whole kernel sweet corn
1 red onion, sliced and caramelized
1 cup Clover fresh full cream milk
2/3 cup grated Clover mature cheddar
1/3 cup beef biltong, finely sliced
1/3 cup crumbed Clover plain feta cheese
2 tablespoons piquanté peppers, finely chopped
3 teaspoons baking powder
2 teaspoons dried oregano
Salt and pepper
Have medium heat coals ready or set your oven to 180°C.
Line a medium-sized braai pot (braai) or a baking loaf tin (oven) well.
Place flour, baking powder, oregano, salt and pepper into a mixing bowl.
Add eggs, corn, caramelized onion, milk, cheddar, biltong, feta and piquanté peppers into another bowl and mix the ingredients well to combine.
Pour the wet ingredients into the dry ingredient and mix until just combined.
Pour the dough mixture into the braai pot or the loaf tin.
Place the pot onto coals, close with the lid, and ladle extra coals over the lid. Allow to cook for 1 ½ hours. Keep adding more medium coals around and on top of the pot to ensure an even cooking temperature.
Or bake the bread in an oven for 45 – 50 minutes.
Test the bread with a skewer – if it comes out clean the bread is ready.
