For the feta and cranberry parcels:
A few sheets of phyllo pastry, cut into squares
200g Clover traditional feta
100g dried cranberries, finely chopped
50ml cranberry sauce/strawberry jam
Few sprigs of thyme
Melted butter
For the onion and cheddar parcels:
A few sheets of phyllo pastry, cut into squares
1 jar onion marmalade
200g Clover mature cheddar cheese, cut into small cubes
50g Clover Tussers cheese, cut into small cubes
Melted butter
To make the feta and cranberry parcels:
In a bowl, crumble the feta and mix thoroughly with the chopped cranberries.
Place a dollop (1 – 2 tablespoons) of the mixture on the center of each phyllo pastry square.
Drizzle over the cranberry sauce and top with thyme leaves.
Fold the corners of the phyllo pastry up to form a parcel. Brush with melted butter and bake in a 200°C oven until the phyllo pastry is golden brown.
To make the onion and cheddar parcels:
Place a few cut cubes of feta onto a phyllo pastry square.
Add a teaspoon of onion marmalade and top with a few cubes of Clover Tussers.
Fold the pastry into your desired parcel shape and brush with melted butter.
Bake in a 200°C oven until the phyllo pastry is golden brown.
