1 packet nacho chips of your choice
2 cups Clover cheddar cheese, grated
1 ½ cups Clover fresh full cream milk
¼ cup crispy onion bits
3 tablespoons pickled jalapeños, chopped
1 ½ tablespoon flour
1 ½ tablespoon butter
Salt and pepper
To make the cheese sauce, place the butter in a saucepan and melt over a medium heat.
When the butter has melted, mix in the flour to make a smooth paste. Cook it for 1 minute.
Whisk in the milk slowly, making sure there are no lumps.
Simmer the sauce for 10 minutes, until thickened, and remove from the heat.
Stir in the cheese and mix until all the cheese has melted.
Season well with salt and pepper.
Place the nacho chips on a serving dish, pour the cheese sauce over the chips, and top with jalapeños and onion bits, then serve while its warm.
