Clover Classic Queen Cakes

INGREDIENTS

  • 125g Clover Mama Bake
  • 150g sugar
  • 2 medium eggs
  • 250g plain flour
  • 1 teaspoon baking powder
  • pinch of salt
  • 1 teaspoon lemon zest
  • 2 – 3 tablespoons milk

Method

  1. Preheat the oven to 180°C.
  2. Cream the Clover Mama Bake with the sugar until light and fluffy.
  3. Beat in the eggs gradually, one at a time.
  4. Sift together the flour, salt and baking powder.
  5. Fold the dry ingredients into the creamed mixture along with the lemon zest.
  6. Stir in the milk.
  7. Spoon the mixture in cupcake cases or a well-greased muffin pan and bake for 12 – 15 minutes.
