Clover Good Hope Soy Smokey Bean Tortillas

A favourite for the whole family! These smokey bean tortillas are packed with flavour.

INGREDIENTS

For the Tortillas

  • 1 cup Chickpea flour
  • ½ cup Tapioca flour
  • ¾- 1 cup Clover Good Hope Soy Regular
  • ½ tsp Salt

 

For the Smoky Bean filling

  • 1 tin Red kidney beans, drained
  • 1 tin Chopped tomatoes
  • 1 Red onion, chopped
  • 2 Garlic cloves, chopped
  • 1 tbsp Coconut sugar
  • 2 tbsp Tomato paste
  • 1 tbsp Ground cumin
  • 1 tbsp Ground coriander
  • 2 tbsp Smoked paprika
  • 1 tbsp Chili powder
  • 500ml Vegetable stock
  • Salt & pepper to taste

 

For the Slaw

  • 1 Carrot, julienned
  • Half Red baby cabbage, shredded
  • 3-4 Spring onions, julienned
  • 1 Baby cucumber, julienned
  • 2 tbsp Olive oil
  • 1tsp Apple cider vinegar
  • 1tsp Coconut sugar
  • 1 Avocado, sliced
  • Salt & pepper to taste

 

 

Method

For the tortillas

  1. Add the flours and salt into a bowl and gradually pour in Clover Good Hope Soy Milk and mix.
  2. Pour a thin layer of the batter into a greased pan.
  3. Cook for 2 minutes on each side and until golden in colour.

 

For the Smoky Bean filling

  1. Heat a saucepan with a dash of oil.
  2. Add the onion and garlic, and sauté until translucent.
  3. Add the beans, tomatoes, sugar, tomato paste, spices and half of the stock to the saucepan.
  4. Season with salt and pepper.
  5. Reduce the temperature and add more stock if needed.
  6. Dish onto tortillas with slaw and serve.

 

For the slaw

  1. Mix together the olive oil, apple cider vinegar, sugar and salt & pepper.
  2. Toss together with the slaw ingredients.
  3. Add some mixture to the smokey bean filling, along with avocado slices.
  4. Wrap up the tortillas and enjoy.
