± 50 g Clover Feta, Halloumi or Cheddar Cheese per person (see below)
± 125 g fresh and dried or preserved fruit and nuts per person (see below)
Apple juice dressing
50 ml white vinegar (balsamic, grape or white wine)
or
½ lemon juice and ½ white vinegar
100 ml Clover Krush Apple Juice
50 ml oil such as olive, avocado or macadamia
Good pinch white pepper
Good pinch salt
1 ml prepared mustard (any favourite French, English or granular)
2 ml sugar or a little more to taste
2 ml crushed garlic (optional)
Ground black pepper (optional)
Pinch cayenne pepper (optional to add bite)
Place all the ingredients for the dressing into a suitable sealable jar or container.
Seal and shake well.
Adjust seasoning and refrigerate until required.
Shake well before using.
To make individual servings, arrange a neat portion of any preferred Clover cheese such as Feta, Halloumi or Cheddar onto each plate.
Decoratively add any combination of available fresh fruit which will not discolour soon after slicing such as figs, strawberries, grapes or cherries and any available best quality dried fruits such as mango, soft apricots or apple rings or drained preserved fruit such as green figs or mandarins.
Scatter a few fresh or roasted and salted nuts of any kind or mixed nuts if preferred over all. Drizzle lightly with apple dressing.

Tip:
Replace the dressing above with any fruity new-style dressing of which many are available on the shelves e.g. some with raspberry and others with prickly pear!
