1 cup Greek yogurt
½ cup Olive Pride Extra Virgin Olive Oil 1 tbsp Olive Pride Fat Spread 3 large Eggs
1 Lemon (zest and juice)
½ cup Sugar
1 ¼ cups Flour
¾ cup Almonds, grounded
2 tsp Baking powder
¼ tsp Salt
2 cups Seedless red grapes (cut in half lengthwise)
Preheat the oven to 1800C.
In a large bowl, whisk by hand the yogurt, Olive Pride Extra Virgin Olive Oil, Olive Pride Fat Spread, eggs, lemon zest and lemon juice until well blended (this could also be done in a blender or stand in mixer).
Add the sugar, flour, ground almonds, baking powder and salt. Mix well.
Spray individual tart tins with non-stick spray. Divide the batter equally between six tart tins. Press the grape halves decoratively into the batter, cut side down.
Bake for 15 minutes or until a tester comes out clean. Let cool a bit before eating. Serve with yogurt and honey on the side.
