enough Clover Farmstyle butter
1,2 kg mutton cubes
2,5 ml (½ teaspoon) salt
2 onions, chopped
5 ml (1 teaspoon) freshly chopped garlic
5 ml (1 teaspoon) ground fine cumin (jeera)
2,5 ml (½ teaspoon) mustard seed
15 ml (1 tablespoon) cornflour
2 cardamom seeds
2 whole cloves
5 ml (1 teaspoon) turmeric
20 ml (4 teaspoon) garam masala
1 ml black pepper
375 ml (1½ cups) white wine
250 ml (1 cup) mutton stock
410 g (1 can) chopped tomatoes
YELLOW RICE WITH RAISINS
500 ml (2 cups) boiling water
250 ml (1 cup) white rice
5 ml (1 teaspoon) turmeric
1 whole cinnamon stick
2,5 ml (½ teaspoon) salt
125 ml (½ cup) seedless raisins
Melt enough butter and fry the meat until browned on the outside.
Spoon the meat out and set aside.
Sprinkle with salt.
Melt more butter and sauté the onion and garlic until tender.
Add all the remaining ingredients.
Stir until mixed well.
Return the meat to the saucepan.
Cover with the lid and let it simmer slowly for 2 hours, or until the meat is tender. Stir once during these 2 hours.
Meanwhile, cook the yellow rice.
YELLOW RICE WITH RAISINS
Pour the boiling water, rice, turmeric, cinnamon and salt into a large glass dish.
Cover with cling wrap and microwave on 100% for 14 minutes.
Set the rice aside to let it hydrate.
Drain the rice with a colander.
Stir in the raisins and heat again at 100% power for 4 minutes.
Stir the rice and serve hot with the curried meat.
