4 tbsp Olive Pride Extra Virgin Olive Oil 2 Onions, chopped
3 cloves Garlic, chopped
1 tsp Cumin
1 tsp Coriander
1 kg Pork trotters, to make cooking easier ask your butcher to cut the trotters in slices
3 tbsp Tomato paste
1 tsp Salt
1 tsp Black pepper
2 cups Water
3 tbsp Brown onion soup
3 tbsp Water
1 tbsp Olive Pride Fat Spread
1 handful Parsley, chopped
Chunky bacon pieces
With cooked samp or rice
Heat the Olive Pride Extra Virgin Olive Oil in a pot over medium heat and fry the onions until soft.
Add the garlic and spices and saut. for a minute.
Add the pork and fry for about 5 minutes or until browned.
Add tomato paste, salt and pepper.
Pour the water in and scrape all the sticky bits at the bottom of the pot. Cover and simmer for an hour.
Remove the lid and continue to simmer for 20 minutes or until half the liquid has evaporated.
Mix soup powder with water to make a smooth paste. Stir into the pot and simmer for five more minutes. If it is too thick add a bit more water. If too thin add a bit more onion soup.
Stir in the Olive Pride Fat Spread – let it melt and enrich the dish. Top off your stew with fried bacon pieces to add more flavour & texture to your dish.
Serve with chopped parsley over some hot samp or rice.
